campeón olímpico y ex-campeón mundial
Olympic champion and former world champion

If a sportsperson becomes champion, or wins the championship, Spanish uses campeón with the verb proclamarse.

El boxeador se proclamó campeón mundial en Berlín.
He won the championship in Berlin.

You can also use campeón as an adjective, following the noun it refers to:

A sus veintidós años esta gimnasta campeona está dispuesta a llevar a cabo su sueno.
At the age of twenty-two, this champion gymnast is getting ready to fulfil her dream.
