rico, adjective
rich; delicious

Just like English rich, rico can refer to literal wealth:

la gente rica
rich or wealthy people

When something is rich in something else, the preposition you use is en:

Tenemos una dieta excesivamente rica en proteínas.
We have a diet which is excessively rich in proteins.

Rico differs from English rich in referring to delicious food and flavours. Notice that you use estar, not ser:

Prueba esta ensaladilla, está muy rica, que la mahonesa es casera.
Try some of this Russian salad, it’s delicious, the mayonnaise is homemade.
