Fact of the Day: olives Rich in history, olives are believed to have been first cultivated about 6,000 years ago. Olives have been a mainstay of the Mediterranean diet for centuries, and some olive trees in that region are 2,000 years old. The green olive and the black olive come from the same tree and are the same fruit; the only difference is the degree of ripeness. Unripe or immature olives are green, while fully ripe or mature olives are black. All olives must be pickled or cured before they can be eaten, and green olives are processed differently from black olives. There is an interesting lexicon for olive size, including bullet, fine, brilliant, superior, small, medium, large, extra large, jumbo, extra jumbo, giant, colossal, super colossal, mammoth, and super mammoth.
