There are some very common phrases with el sol it’s useful to be able to use.

al sol
in the sun, in the sunlight
Dejan secar al sol sardinillas pequeñas.
They dry small sardines in the sun.

When it’s sunny, you can use the verb hacer in hacer sol, to be sunny, a similar construction to hacer frío, to be cold.

Hoy hace mucho sol.
It’s very sunny today.

And if you like sunbathing, the phrase you need is tomar el sol.

Salieron por la tarde al parque para tomar el sol.
In the afternoon they went to the park to sunbathe.
