Cleaning our hands is the single most important thing we can do to keep from getting sick and spreading illness to others. Hand washing is important for food safety, disease prevention, and personal health. The Center for Disease Control estimates that 78 million people become ill each year from foodborne illness, 5,000 of whom die as a result. The proper steps are: wet your hands with clean, warm running water and apply soap; rub hands together to make a lather and scrub all surfaces for 20 seconds; rinse hands well under running water; and dry your hands using a towel or air dryer.
