Fact of the Day: monosodium glutamate

Monosodium glutamate has no flavor of its own, but enhances the flavor of other foods. Discovered in the Far East, it is used in Chinese, Vietnamese, and Japanese food. It is the sodium salt of glutamic acid and is found in mushrooms, seaweed, and gluten - and can cause disorientation, headaches, and pressure in the forehead and behind the eyes. Since there is some glutamic acid naturally in the body, these reactions are probably cause by a temporary excess of the acid. But, in perspective, salt and sugar have been proven to pose much greater health risks than MSG.
