El oído is the basic word for the sense of hearing:

Tiene un oído muy fino.
He has a very keen sense of hearing.

But it also refers to the internal parts of your physical ear:

tapar los oídos
to cover your ears
Me tapo los oídos un instante, para no escuchar su risa.
I put my hands over my ears for a second, so as not to hear his laughter.
