El varón, boy, male, is a basic way of referring to the sex of someone’s children.

Tienen cinco hijos: dos varones y tres hembras.
They’ve got five children: two boys and three girls.

Varón is often used in the phrase hijo varón, to talk about male offspring:

el único hijo varón de Onassis
Onassis’ only son

It’s also the word you’ll find on official forms if you have to state your sex:

male/female
